Sorry we’ve been MIA these past 6 months! We LOVE doing and everything and I mean EVERYTHING together- so we thought, why not take turns having surgery and recovering together, that’ll be fun right?! But seriously, Lu & I went through some major health issues over the spring and summer. We both had to have surgery which each came with a long recovery. It’s been emotionally and physically time consuming to say the least. But we went through it together and helped each other along the way!
and now we’re BACK!!! just in time for the best time of the year…. FAIR SEASON!! That’s right!! Friday is opening day for the State Fair of Texas and you know we’ll be there with our season passes!! so stay tuned!!! we’ll be talking all these fair, farm and FOOD over these next 4 weeks!!!!!
Maurice’s is our favorite store in the whole wide world. I love that Lu & I dress differently and yet can find clothing at Maurice’s – together – that fit our styles perfectly!!! They have a mixture of casual, athletic, business and dressy- seriously we’ve never gone in the store and left empty-handed! I love their graphic tees the best. They always find a way to print exactly what we’re thinking, plus they’re actually cute shirts and not just a catch phrase printed on a craft store t-shirt if ya know what I mean 😉
oh! and they have SHORT size pants!! you may think that’s not a big deal but that’s harder to find than you’d think. and yes they also have long for my tall chicas 🙂 The store also has ALL sizes- there is something for EVERYone!! It’s affordable, good sales, good quality, trendy but not teeny-boppery if that makes sense 🙂 plus they have great accessories, cute shoes, and the best pj’s in the winter!
But what we love most about the store are the ladies inside 🙂 If you live in the DFW area you HAVE to go to Maurice’s at Firewheel Town Center! Victoria and Joy are our people. Even before we became “regulars” we were always so warmly welcomed, and received awesome customer service as we shopped. They’re good at picking out outfit options for customers without being salesy too so if you need guidance, they’re pros! We eventually became known as the mother/daughter duo and even got flak from the ladies when we came without one or the other.
and now we’re official!!!!….
So if you need to feel fabulous, comfy, fancy, all of the above or anything in between- do yourself a favor and go to Maurice’s!!! You’ll thank us later!!! **and ask what the current sales are!!!! There’s ALWAYS a sale going on!!!**
Today Lu & I snuck away from all our responsibilities and went to Claires! Yes, that’s right, you heard me correctly….we went to Claires 🙂 I (Su) had been thinking about getting another cartilage piercing and decided today was THE DAY! but I couldn’t do it without my Partner in Crime Lu!
Back Story! One of my favorite memories is for my 16th birthday Lu let me skip school and took me to Claires to get my 2nd ear piercing and she got her 3rd. We felt like we were doing something baaad and rebellious 🙂
so when I decided to get this piercing I knew it had to be with Lu on a weekday morning when we should be working 🙂 I mean we’re all about traditions- THIS is a tradition we should keep alive!!! I tried talking her into a cartilage piercing also…maybe next time ha
It turned out super cute and then we went shopping and out to lunch! Yay for escaping our responsibilities for a couple of hours 🙂
Welcome to our Complete Keto Dinner! Lu & I tried out a bunch of recipes for dinner the other night and we HAVE to share them with you bc ahhhhh they’re so good!!!
Let’s start with the Dressing for our salad
Green Goddess Dressing makes 1 cup. I doubled mine to fill a mason jar.
Ingredients * 1 cup dairy-free Original Nutpods creamer – I found it at Kroger, but you can purchase it on Amazon HERE * 1/2 medium avocado *1/4cup of basil, roughly chopped * 1 lemon, juiced * 2-3 garlic cloves * 3 Tbsp avocado oil * salt and pepper to taste
Instructions 1. Combine all ingredients in a food processor or blender- until smooth and creamy 2. add 1-3 more Tbsp if you want a thinner consistency
That’s it!! Flavor is spot on a match with Annie’s Green Goddess Dressing!
Next up is the Main Course!
Chicken Chile Casserole
Prep time 5-10min, Cook time 40min. This recipe I’m sharing is for 8 servings. It can easily reduced for a smaller crowd Ingredients * 3-4 boneless skinless chicken breasts- trimmed. the ones I bought were pretty thick so we cut them in half lengthwise so they were thinner. * 1 8oz package cream cheese softened * 1 4oz can chopped green chiles * 1 cup monterey jack shredded cheese * 1/2 tsp garlic powder * 1/4 tsp cumin * 1/4 tsp each of salt & pepper
Instructions 1. heat oven to 375 2. in a medium bowl- mix the cream cheese and all spices until combined. Stir in the green chiles until evening mixed 3. lay the chicken breasts flat in a baking dish. cover the chicken breasts with the green chile mixture. Then top with the monterey jack cheese. 4. bake for 35-45min 5. serve over sauteed spinach or cauliflower rice 🙂 *the kids loved this one!!*
How about some dessert?!?!?
Ingredients * 16oz heavy cream * 8oz cream cheese- softened * 1 small box sugar free jello- i’ve made this with strawberry and raspberry so far and both were good
Instructions 1. whip the cream cheese first so it is smooth. (I used an electric beater) 2. add heavy cream and jello powder- whip until it reaches a fluffy texture Notes: I made it a few hours before dinner and put it in the fridge to kind of thicken. I made it another time right before dinner and it was still good but it’s better sitting in the fridge for a bit. I think you could also add fruit to this- or even do another layer of actual jello. This is seriously good- I get requests for this every day for dessert 🙂
Well, it’s that time of year again. Yes it is St. Patrick’s Day which can be a fun day to celebrate for most people. But in our family it has a whole different meaning. As you see, Su was born on this day. Through her younger years she truly believed the parties, parades and balloons were all for her. Everyone seemed to celebrate her birthday! So with that established in the early years, Su’s birthday is always a party. And don’t you think it only happens on that day – no no no – it is a week long event. We like to call it the SUpalooza or The Week of Su. It usually begins with a shopping trip and lunch just for the two of us. Next comes the pre-parade night where the family gather to eat a special homecooked meal that will help us prepare for the next few days. The parade will follow the next day and of course there is always green beer.
Then the finale is the gathering that takes place in a fun and festive location of all friends and family to celebrate in Su style – Green attire, crazy hair and accessories, lots of food and fun.
Honestly it is great! I admire Su for fully enjoying her birthday. Sometimes we play those special days down and I think that is a shame. Life should be lived fully. Birthdays are a gift and should ALWAYS be celebrated. From day one Su has been a person worth celebrating so if she wants a Week of Su then I say “YOU GO GIRL!” Happy Birthday Sweet Su and here’s to many more!
Su here!!! I wanted to add our reviews of the places we went this weekend!!! First up: Tupps Brewery in McKinney! first of all, this is the PERFECT place for families to go for St Patrick’s Day festivities!!! The music, the atmosphere- it was spot on! They had a whole area set up for kids to play- lots of activities, crafts, they had a blast! Parents were able to drink green beer and there were no lines!!! They had beer passes this year so you were able to get your beer and go! Tupps is a fun place to go on a regular day too 😉 They have a new fruit based beer: Peach Apricot Wheat that would be perfect to drink while sitting at the brewery listening to music 🙂 Next up! Legacy Hall in Plano!! so this was our first time going here- wow it’s so cool! There are like 20 different restaurants surrounding the stage – all VERY affordable and something for everyone. Keith and I had 4 street tacos with chips and guac for $20! I will say where they get you though is alcohol prices so be ready. The best deal we could find is getting a bucket o’ beers for $20-25. It’s both indoors and outdoors with awesome seating everywhere and fire pits and heaters galore so even though it was night in March we were super comfortable outside! We saw lots of families there which is always a plus so we’ll be back!! Last but not least is Tricky Fish in Cityline area of Richardson! I love this place ahh it’s so good. We always get Cracklins to start- yall they make pork rinds and they come out hot and yep they make the crackling sounds!! We highly recommend those!! We went for brunch but everyone ended up getting the salad bc it’s THAT good- they grilled romaine leaves- like the whole stalk- and serve it with roasted okra, a couple of other goodies and then I love it with salmon on top…ahhh I’m hungry just thinking about it!! Their brunch drink menu is impressive. They have a few options for mimosas but I had a La Paloma- fresh grapefruit, tequila, lime and then they top theirs with a little champagne! ahhh it was go good 🙂
But I will say that every place we go….what makes them so amazing are the people I go there with. I’m very grateful for my family and friends!!!
It’s my birthday week (because my bday is always a week long event!!) so I thought it was only appropriate that for this week’s TBT we go back to 2010- my 23rd birthday!
I was obsessed with Julia Child (still am) and wanted to make her famous Boeuf Bourguignon (said in JC’s voice), so for my birthday we had a dinner party!! Lu & I cracked open JC’s Mastering the Art of French Cooking and together we finagled out way through the instructions, with aprons on of course! We made the entire meal pretending we were doing our own cooking show but of course talking like Julia Child the whole time! There were many “Save the Liver” utterances while cooking, even though no liver was present to save. We laughed, we cried (onions tend to have that effect) and laughed some more until the meal was ready!!! It turned out pretty good too!
I love cooking with Lu. She cooks without boundaries and rules- a goal I hope to attain one day. She’s taught me to cook with love, laughter, and wine 🙂

So if you have read any of our previous posts you may have come across the “40 Days 40 Bags” that Su penned. I had taken my dad to a midday Ash Wednesday Service that day and left Su alone for just a short period of time and wham – I am stuffing bags the next 40 days! What?! So what did I do about it!? I TOLD HER ——-of course I will do it. 🙂 That’s what we do. We take on things together. Good/bad/funny/sad. All of it. I started stuffing bags. I have had bags so far that contained clothes, kitchen appliances, and magazines. But my favorite one so far is my bag of bags. When I pulled it out of the closet I literally laughed out loud. Who in their right mind has a giant bag full of every shopping bag you have brought into the house. (ME!) If there ever was a national emergency where all the bags were gone and the call went out for anyone who had bags to help supply that need – I could have answered that call for thousands. Not really, but seriously, why did I have all those bags. So I pulled them out and they are now on their way to be recycled. To hopefully become something more useful than a giant mess in my coat closet. Truthfully, I am glad she put us up to this task. I started the process of down-sizing several years ago and it has been interesting. In the past 7 years I have transitioned from 2,500 sq ft. to today I am in 1001 sq ft. with a possibility of one day soon going smaller. This process is not easy but it is freeing. Stuff – just stuff – holds you back more than you know. When you fill your life with stuff, you have less time for the important “stuff” (your relationships with family members, friends, and Jesus). So Su and I are now 7 days in and I already feel lighter. 33 more bags to go!
Eating healthy and eating out don’t always go hand in hand but with Su & Lu ANYTHING is possible!! We had read about a Keto Bowl option now available at Chipotle and decided today was the day to give it a go. We walk up to the counter and goofily ask for the keto bowl we’ve read about. (and yep, we asked it like that) Luckily for us, she knew what we were talking about- bc we sure didn’t- and starts building our bowl. Lettuce, steak, guac, sour cream, cheese- our eyes were getting big and our tummies were getting excited! then we got to salsa and not thinking twice we said yep! I mean seriously it’s the basic salsa they offer to everyone so that tomato-y taste with a little heat would be perfect!!!
We shoulda said no…. I’ll let our pic speak for the flavor….
Topo Chico couldn’t help our situation. Lu even took the steak and wiped it with napkins so we could at least eat the meat. It was pretty pathetic- even for us. But of course we laughed until we cried- and then cried because we were in pain- and vowed to never have the salsa again!!!
Keto Bowl Update! I went back a few days later and ordered the same thing WITHOUT salsa this time and it was AMAZING!!! I felt like I was eating something awful for me but left feeling satisfied and still able to feel my tongue and lips!!!
Well here we are again, back in the kitchen, one of our
favorite places to hang out. Usually
these cooking episodes include fun, laughter, wine and some of our best meals
we have put together. This one is no
exception. We have decided to conquer
homemade cauliflower crust pizza. Su has
scoured the internet for recipes and has selected the one she thinks is “it”. So here we go:
As always, we are a team. The cauliflower is cooking, we are measuring bowls of cheeses, eggs and seasonings. We have set our sites on 9 crusts – 3 for tonight and 6 for the freezer. It is easier than we think to put these together. We cook each crust and they all have a look of their own which gives them that homemade touch. We add our pizza sauce (tip: always read the labels as you do not need any extra sugar). We grate some fresh mozzarella and add the pepperoni. Into the oven it goes. There is nothing better than smell of pizza freshly baking in the oven – yummmmmmmm! We take it out piping hot and then the real test begins. We are serving our family: 2 kids, 2 husbands and my dad (Su’s Papa). Guess what! It is a hit! Everyone enjoys it with no complaints! So we are including the recipe below with a Su and Lu stamp of approval. We have decided though that we will try two other recipes that we have discovered for Keto friendly pizza crust before we cast our vote for our favorite. But that is for another weekend. Stay Tuned!
Recipe for Cauliflower Pizza Crust Ingredients: *1 bag of cauliflower rice (12oz usually is the size) *1/3 cup of mozzarella cheese *1 Tbsp parmesan cheese *1 egg *1/4 tsp garlic powder *1/4 tsp oregano *1/4 tsp calt
Instructions: 1. Preheat oven to 400 degrees 2. Cook cauliflower rice according to bag instructions- it’s either microwave or easy heat on the stove top. 3. SUPER IMPORTANT STEP!!! place the cauliflower rice on a cutting board and grab a milk bag or tea towel and SQUEEZE as much liquid out of that rice as possible. this is SOOO important because if you don’t, your crust will be soggy 4. In a medium size mixing bowl, combine drained cauliflower rice with mozzarella, parmesan, egg, garlic powder, oregano and salt. Stir until fully combined. 5. Dump the dough out onto a baking sheet or pizza stone *lined with parchment paper* and form into a circle. Make sure it stays about 1/2″ thick- basically no holes 🙂 6. Bake for 20-25 min or until golden brown. Use the parchment paper to flip the crust over and bake again on the other side for about 5-10min more. 7. Add your fave toppings and cook for 8-12 min or until the cheese is melted and bubbly ORRRRRRR don’t add the toppings and FREEZE!!! 7.5- if you want to freeze your crust ahead of time for later don’t add those toppings- stop here! put it in the freezer just like it is on the parchment paper for 1-2hours. Then wrap in aluminum foil and put back in freezer until you’re ready to eat!! When you’re ready to make the pizza- take the crust out of the freezer, don’t thaw, but immediately go to step 7 and then enjoy 🙂
