Keto King Cake and a Baby We Couldn’t Find…

I’ve always wanted to make a king cake. It’s so rich in history, symbolism- and flavor 🙂 so when I found a keto recipe on pinterest I decided to give it a shot!!

Because Lu & I are nerds we first used it as a learning experience for the kids 🙂
Green symbolizes faith, Gold is power and Purple is justice. The cake represents the crown of the three wise men who visited Jesus. and then the plastic baby hidden in the cake represents the baby Jesus.

I made the cake part on Saturday so we could eat it after lunch on Sunday without having to wait forever (stay tuned for the recipe). My fave part was mixing the egg whites and cream of tartar. I had never done that before watching it thicken up was pretty cool 🙂 The recipe was actually pretty easy to make too!!
I hid the plastic baby in the cake- no strategy or anything, just plopped it in the batter- baked the cake and put it in the fridge for Sunday.

Sunday Lu & I made the frosting and colored sugar- all keto friendly yay!!! The cake turned out pretty cool looking…

Time to cut the cake!!!
First of all I thought I’d hit the baby while slicing the cake, or at least cut close enough that it would stick out or something…I mean it’s not THAT small right?!?!
We ate half the cake after lunch…. and no baby.

Fast Forward to dessert after dinner time!!!
We had my in-laws over for dinner- 7 slices of cake- with ONE TINY SLIVER of cake left on the plate. we all ate our cake… NO BABY!!!
I can’t make this stuff up…..the baby was in the tiny sliver!!!!!
What are the odds on this stuff?!?!?!

The prize was chocolate coins meant to be for the person who found the baby but since NO ONE did (?!?!?!) we shared them!

Here’s our Recipe for Keto King Cake!

For the Cake:
* 5 large eggs separated
* 1/4 tsp cream of tartar
* 6 Tbsp melted butter
* 1 tsp vanilla
*4 oz cream cheese softened
* 1/4 cup + 2 Tbsp Erythritol
* 2 tsp baking powder
* 1 cup almond flour
* 2 tsp cinnamon
For the Frosting:
* 2 Tbsp butter softened
* 1 oz cream cheese softened
* 2-3 Tbsp heavy whipping cream
* 3 Tbsp confectioners erythritol
* 1/2 tsp vanilla
For the Colored Sugar:
* 6 tsp granular erythritol divided
* 2 drops yellow food coloring
* 2 drops green food coloring
* 1 drop red food coloring
* 1 drop blue food coloring

1. Preheat over to 350 degrees F and thoroughly grease a bundt pan
2. separate the eggs into 2 large bowls. Add cream of tartar to the egg whites and beat with an electric mixer until soft peaks form, set aside.
3. add 3 Tbsp of melted butter, vanilla, cream cheese and 2 Tbsp of erythritol to the egg yolks. Mix until combined then add 1 tsp of cinnamon, baking powder and almond flour, mix well.
4. fold the egg whites into the almond flour mixture and mix well
5. in a small bowl combine the remaining 3 Tbsp of melted butter, 1 tsp of cinnamon and 1/4 cup of erythritol.
6. pour 1/2 the batter into the pan, then evenly top with the cinnamon mixture, and then cover with the remaining batter.
7. using a butter knife, make swirls in the cake, keeping the knife vertical to prevent the layers from mixing too much.
8. Hide the baby!!!
9. bake for 30-40 min or until golden on top. cool, remove from pan.
*if you’re making the cake ahead of time like we did- stop here. wrap the cake in saran wrap and put in fridge until you’re ready to eat 🙂 *
10. while your cake is cooling, make the icing by combining the cream cheese, butter, vanilla, erythritol, and heavy cream in a bowl using a whisk. *I did 3 Tbsp of heavy cream at first but it was still a little thick so I added another Tbsp*
11. To make the colored sugar for decoration, divide 2 tsp of erythritol into 3 separate bowls and mix each bowl with 2 drops of food coloring. for the purple, use 1 drop of blue and 1 of red. *we did 2 of each*
12. once you’ve removed the cake from the pan, top it with frosting and sprinkle with colored sugar 🙂

Lemonale Launch Party!

Lu here. I am supposed to be the voice of reason in this duo but that isn’t always the case. So it’s Friday – it’s March 1st and it’s unusually cold outside. We have had a bit of a hard week so how should we spend our day. In comes Su, my faithful and most fun companion in crime. There’s a Lakewood Lemonale Launch she says. Now the voice of reason should say “maybe drinking beer at noon on a Friday is not how we should spend our time” but instead what comes out of my mouth is “pull up the directions!” So here we are Su and Lu with our commemorative glasses

Some might think this is a waste of time but not us. It’s makes us laugh and it is definitely cheaper than therapy. Joy is sometimes a hard thing to find but when you have someone who brightens your day – you stop and say “pull up the directions!”
